Ingredients

  • 3 large yams
  • 3 medium oranges
  • 2 Tbsp butter or margarine
  • 1 Tbsp grated orange peel
  • 3/4 cup dark corn syrup

Instructions

  1. Cook yams in salted water until fork-tender. Cool.
  2. Peel yams and cut off ends.
  3. Cut each yam crosswise into 4 slices.
  4. Place yam slices in a shallow casserole.
  5. Peel oranges and slice each crosswise into 4 slices.
  6. Arrange orange slices on top of the yams.
  7. Heat butter, grated orange peel, dark corn syrup, and salt in a saucepan.
  8. Pour the mixture over the yams and oranges.
  9. Bake in a 325°F oven for about 40 minutes, basting twice during baking.
