Orange-Pineapple Carrots

Ingredients

  • 3 c. carrots, sliced and cooked (1 lb.)
  • 1 Tbsp. sugar
  • 1 tsp. cornstarch
  • 1/4 tsp. salt
  • 1/4 tsp. ground ginger
  • 1/2 tsp. parsley flakes
  • 1/4 c. orange juice
  • 2 Tbsp. crushed pineapple
  • 1 Tbsp. butter

Instructions

  1. In a small saucepan, combine sugar, cornstarch, salt, ginger and parsley flakes.
  2. Add orange juice and pineapple.
  3. Cook, stirring until thickened.
  4. Cook, stirring 1 to 2 minutes more. Stir in butter.
  5. Pour sauce over hot carrots, stirring lightly to coat.
  6. Yield:
