Ingredients

  • 4 medium sweet potatoes
  • 1/2 cup orange juice
  • 2 tablespoons brown sugar
  • 1/2 teaspoon grated orange rind
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 dashes Angostura bitters

Instructions

  1. Boil the sweet potatoes until tender.
  2. Remove the skins from the sweet potatoes.
  3. Mash the pulp and add orange juice, brown sugar, grated orange rind, cinnamon, nutmeg, and bitters.
  4. Whip until fluffy.
  5. Place the mixture in a one-quart ungreased casserole dish.
  6. Bake, covered, at 350°F for about 25 minutes.
