Ingredients

  • 1 Tbsp. shortening
  • 8 c. shredded red cabbage
  • 1 medium onion, chopped
  • 1/4 c. lemon juice
  • 1/4 c. vinegar
  • 1/4 c. sugar
  • 1 tsp. salt
  • 1 to 2 medium apples, chopped
  • 1/4 c. red currant jelly

Instructions

  1. In a heavy saucepan, melt the shortening.
  2. Add shredded red cabbage, chopped onion, lemon juice, vinegar, sugar, and salt.
  3. Stir well to combine.
  4. Cover and cook over medium heat for 10 to 15 minutes until the cabbage is crisp-tender.
  5. Add chopped apples and cook for an additional 10 to 15 minutes until the cabbage and apples are tender.
  6. Stir in red currant jelly until melted and well incorporated.
  7. Transfer to a serving dish and garnish with lemon slices.
