Ingredients

  • 1 cup butter, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 None large egg, at room temperature
  • 1/2 cup all-purpose flour
  • 2/3 cup cornstarch
  • 3/4 cup whole blanched almonds, toasted
  • 2 oz finely chopped candied orange peel
  • 1 tbsp milk
  • 2 tbsp sugar

Instructions

  1. In a stand mixer, beat butter, sugar and vanilla until pale and creamy. Add egg and beat until combined. Sift flour and cornstarch over butter mixture. Add almonds and orange peel. Mix until smooth, adding milk as needed. Roll into a ball, wrap in plastic wrap and chill for 30 mins.
  2. Preheat oven to 350°F. Line 2 baking trays with parchment paper.
  3. Roll out dough until 1/4 inch-thick. Using a 2 1/2 inch fluted biscuit cutter, cut out rounds. Arrange on prepared trays and sprinkle with sugar. Bake for 10-12 mins, until light golden brown. Let cool for 3 mins on trays before transferring to wire racks to cool completely.
