Oriental-Style Broccoli

Ingredients

  • 2 lb. chicken breast
  • 2 Tbsp. oil
  • 2 bunches broccoli (tops only)
  • salt and pepper
  • 1/4 c. soy sauce
  • 1 Tbsp. cornstarch
  • 1/4 c. chicken broth
  • 1 small clove garlic, pressed
  • 1 tsp. sugar

Instructions

  1. Cut chicken into thin slices 2 inches long by 1/4 inch wide. Heat the oil until very hot, add chicken and saute very quickly, stirring constantly.
  2. Add the broccoli and season with salt and pepper.
  3. Combine the rest of the ingredients and pour over the chicken and broccoli.
  4. Combine well.
  5. Bring to a boil and simmer for 1 minute, stirring constantly.
  6. Serve with brown rice.
  7. Serves 6.
