Ingredients

  • 6 cups water
  • 1 cup orzo
  • 2 tablespoons oil
  • 1 tablespoon oleo
  • 4 tablespoons parsley
  • 4 tablespoons Parmesan
  • 1 tablespoon chopped garlic
  • Salt

Instructions

  1. Bring water to a boil and add salt.
  2. Add orzo and cook, stirring about 10 minutes or until tender.
  3. Reserve 1/4 cup of cooking liquid.
  4. Drain orzo.
  5. Meanwhile, heat oil and butter in a saucepan.
  6. Add chopped garlic and cook, do not brown.
  7. Add orzo, reserved liquid, parsley, Parmesan, and season with salt.
  8. Toss well and serve.
