Ingredients

  • 5 qt. milk
  • 1/2 rennet tablet
  • 1 Tbsp. warm water
  • 1/2 c. cream
  • 1/2 c. flour
  • 2 eggs

  2. Mix 1/2 cup flour with a little warm milk to make a paste.
  3. Add the eggs to the paste and beat well.
  4. Add the egg mixture to the warm milk and stir.
  5. Dissolve the rennet tablet in warm water and add immediately to the milk mixture, stirring slowly until it curdles.
  6. Let stand in a warm place for 2 1/2 to 3 hours.
  7. Drain off the whey.
  8. Put the curds in a baking dish.
  9. Cut in sugar and cream, then bake at 350°F until done.
  10. Serve with lingonberries or strawberries.
