Ingredients

  • 3 cups sliced squash
  • 1/2 cup yellow cornmeal
  • 2 eggs
  • 1 tablespoon water
  • 1/2 teaspoon salt
  • 1/4 teaspoon coarse ground pepper

Instructions

  1. Preheat oven to 450°F and spray a 9 x 13-inch pan with cooking spray.
  2. Beat eggs and water in a bowl and set aside.
  3. Mix cornmeal, salt, and pepper in a separate bowl.
  4. Dip sliced squash in the egg mixture, then roll in the cornmeal mixture.
  5. Place a single layer of coated squash in the prepared baking pan.
  6. Bake for 20 minutes, then turn the squash with a spatula.
  7. Bake for another 20 minutes until golden brown.
