Oven-Roasted Beets *

Instructions
- Trim beets, leaving some stalk intact (so they won't bleed). Place in baking dish with a little water on the bottom or wrap in foil.
- Bake in preheated 400° oven for about 50 minutes (a little longer for foil wrapped beets), until tender.
- Pierce with fork to check tenderness.
- When cool enough to handle, remove the skins; coat with butter and salt and pepper to taste.
