Ingredients

  • 4 jumbo pasta shells, cooked and drained
  • 2 c. spaghetti sauce
  • 2 Tbsp. Parmesan or Romano cheese
  • 1 pkg. chopped spinach, thawed and drained
  • 1 1/2 c. Mozzarella cheese
  • 1 c. cottage cheese
  • 1 egg white
  • salt, pepper and garlic to taste

Instructions

  1. Heat oven to 375°.
  2. Mix spinach, 1 cup Mozzarella, cottage cheese, egg white and Parmesan cheese until blended.
  3. Fill each shell with a heaping tablespoonful of spinach mixture.
  4. Place in a 12 x 8-inch baking dish; spoon sauce over shells.
  5. Cover with foil.
  6. Sprinkle extra 1/2 cup Mozzarella cheese over top.
  7. Bake 35 minutes in oven.
  8. Makes 4 servings.
