Ingredients

  • 1 1/4 c. flour
  • 1 tsp. baking soda
  • 1/4 tsp. baking powder
  • 1 tsp. salt
  • 1/4 c. wheat germ
  • 1/2 c. finely chopped nuts
  • 2 large eggs
  • 1/3 c. salad oil
  • 1/2 c. sugar
  • 1 c. coarsely shredded, firmly packed, unpeeled zucchini

Instructions

  1. Stir together flour, baking soda, baking powder and salt. Stir in wheat germ and nuts.
  2. Set aside.
  3. With electric mixer at high speed, beat eggs, oil and sugar until thickened and foamy. Stir in zucchini.
  4. Add flour mixture and stir only until dry ingredients are moistened.
