- Heat oil in large skillet over medium-high heat.
- Add potatoes and cook about 10 minutes, covered, stirring occasionally.
- Add all other ingredients.
- Stir and cook, covered, until potatoes are fully cooked and begin to crisp.
- Add salt and pepper to taste.
- Serve hot with your favorite main dish!
