Ingredients

  • 8 large Irish potatoes
  • 2 large onions
  • 1/2 cup olive oil
  • salt

Instructions

  1. Wash potatoes and slice them with skins left on.
  2. Slice onions into rings.
  3. Pour olive oil into a large skillet and heat until almost boiling.
  4. Add sliced potatoes and onions to the hot oil.
  5. Season with salt, pepper, and other preferred seasonings.
  6. Cover and cook for about 15 minutes.
  7. Uncover and cook until potatoes are light brown and fork sticks through easily.
