Ingredients

  • 2 lb. well trimmed boneless round steak
  • 3/4 c. vinegar
  • 2 large onions
  • 3 large carrots
  • 1/2 tsp. salt
  • 8 peppercorns
  • 1/8 tsp. ground cloves
  • 2 bay leaves

Instructions

  1. Two days before serving, place well trimmed meat in a large bowl or pan.
  2. In a saucepan, combine 3/4 cup water, vinegar, onions, carrots, salt, peppercorns, ground cloves, and bay leaves.
  3. Heat the mixture to boiling, then pour over the meat.
  4. Cover and refrigerate for two days, turning the meat occasionally.
  5. About 3 hours before serving, remove the meat from marinade and drain on paper towels.
  6. Pat the meat dry.
  7. Strain and reserve the marinade, discarding whole spices.
  8. Brown the meat on all sides in a hot Teflon skillet over medium heat.
  9. Add the marinade, cover, and simmer for 1 hour or until the meat is tender.
  10. To thicken the gravy, mix cornstarch with 2 tablespoons of water to form a paste.
  11. Stir the cornstarch mixture into the gravy and continue cooking until slightly thickened.
