- Two days before serving, place well trimmed meat in a large bowl or pan.
- In a saucepan, combine 3/4 cup water, vinegar, onions, carrots, salt, peppercorns, ground cloves, and bay leaves.
- Heat the mixture to boiling, then pour over the meat.
- Cover and refrigerate for two days, turning the meat occasionally.
- About 3 hours before serving, remove the meat from marinade and drain on paper towels.
- Pat the meat dry.
- Strain and reserve the marinade, discarding whole spices.
- Brown the meat on all sides in a hot Teflon skillet over medium heat.
- Add the marinade, cover, and simmer for 1 hour or until the meat is tender.
- To thicken the gravy, mix cornstarch with 2 tablespoons of water to form a paste.
- Stir the cornstarch mixture into the gravy and continue cooking until slightly thickened.
