Pan Roasted Corn Salsa
Ingredients
- 5 Tbsp. olive oil ⓘ
- 2 1/2 c. fresh corn kernels (about 3 large ears) ⓘ
- 1 large tomato, seeded, diced (about 3/4 c.) ⓘ
- 2/3 c. chopped green onions ⓘ
- 1/4 c. chopped fresh cilantro ⓘ
- 1/4 c. finely diced sweet onion ⓘ
- 3 Tbsp. fresh lime juice ⓘ
- 1 Tbsp. minced jalapeno with seeds ⓘ
- 3 garlic cloves, minced ⓘ
Instructions
- Heat 2 tablespoons oil in heavy large skillet over high heat; add corn. Saute until light brown; cool. Add remaining 3 tablespoons olive oil, tomato and remaining ingredients to corn in bowl. Toss to combine. Season with salt and pepper.
