- Season the lamb chops with salt and pepper.
- Heat a large ovenproof frying pan and add the olive oil.
- Brown the lamb chops quickly over medium-high heat.
- Place the entire pan with the lamb in the oven.
- Roast the lamb chops for 2 minutes per side for medium rare.
- After 4 minutes in the oven, remove the pan from the oven.
- Let the meat rest in the pan for another 2 minutes to relax and finish cooking.
- Serve the lamb chops with onions sautéed in yogurt and sesame oil.
