  1. Preheat the oven to 400°F (200°C).
  2. Season the lamb chops with salt and pepper.
  3. Heat a large ovenproof frying pan and add the olive oil.
  4. Brown the lamb chops quickly over medium-high heat.
  5. Place the entire pan with the lamb in the oven.
  6. Roast the lamb chops for 2 minutes per side for medium rare.
  7. After 4 minutes in the oven, remove the pan from the oven.
  8. Let the meat rest in the pan for another 2 minutes to relax and finish cooking.
  9. Serve the lamb chops with onions sautéed in yogurt and sesame oil.
