A flavorful appetizer of marinated mushrooms with garlic, parsley, and green onions, perfect for entertaining or adding a savory touch to salads and antipasto platters.

Ingredients

  • 1 lb. fresh mushrooms
  • 1 c. vinegar
  • 1 c. oil
  • 2 cloves garlic, minced
  • 3 Tbsp. minced fresh parsley
  • 3 Tbsp. minced green onions
  • 1 tsp. sugar
  • 1 tsp. salt

Instructions

  1. Wash and dry the mushrooms.
  2. Blend vinegar, oil, minced garlic, parsley, green onions, sugar, and salt to make the marinade.
  3. Pour the marinade over the mushrooms.
  4. Cover and marinate in refrigerator overnight.
  5. Drain before serving.
  6. Serve as an appetizer or spoon over salad greens.
