Panko Tilapia

Ingredients

  • 2 tablespoons flour
  • 1 teaspoon lemon-pepper seasoning
  • 1 cup panko breadcrumbs (Progresso bread crumbs)
  • 1 egg
  • 24 ounces tilapia fillets (4 fillets, 6 oz each)
  • 4 tablespoons vegetable oil (I used EVOO)

Instructions

  1. On plate, mix flour and seasoning.
  2. On second plate, place bread crumbs.
  3. In bowl, beat egg with fork.
  4. Coat fish with flour, dip into egg and coat well with bread crumbs.
  5. In 10-inch nonstick skillet, heat 2 Tbsp of the oil over medium-high heat. Add 2 fish fillets and cook 3 minutes.
  6. Carefully turn fish over. Reduce heat to medium and cook about 3 minutes longer or until fish flakes easily with fork.
  7. Repeat for remaining 2 fillets.
