Ingredients

  • 4 c. presoaked toasted steel cut oatmeal
  • 2 c. cored, chopped tomatoes
  • 1/2 c. diced red onion
  • 1/2 c. sliced celery
  • 1/2 c. sliced basil leaves
  • 1/2 c. sliced pitted green olives
  • 1 Tbsp. minced garlic
  • 1/2 c. olive oil
  • 2 Tbsp. red wine vinegar

Instructions

  1. Combine all ingredients and allow to sit at room temperature for 30 or more minutes.
  2. Serve on leafy lettuce with crusty bread.
