Ingredients

  • 1 1/4 cups warm water
  • 2 packets active dry yeast
  • 2 tablespoons sugar
  • 1 1/2 teaspoons medium grind black pepper
  • 1 teaspoon salt
  • 3 1/2 to 4 1/2 cups all-purpose flour
  • 1 egg
  • 1 cup grated Parmesan cheese
  • 1 egg white, lightly beaten

Instructions

  1. Place 1/2 cup warm water in a large bowl.
  2. Sprinkle yeast over the water; stir until dissolved.
  3. Add remaining water, sugar, pepper, salt, and 1 cup of flour; blend well.
  4. Stir in the whole egg, Parmesan cheese, and enough flour to make a soft dough.
  5. Knead on a lightly floured surface until smooth and elastic, about 4 to 6 minutes.
  6. Place the dough in a greased bowl, turning to grease the top.
  7. Cover and let rise in a warm place until doubled in size, about 30 to 45 minutes.
  8. Punch down the dough.
  9. Remove dough to a lightly floured surface and divide into 3 equal pieces.
  10. Roll each piece into a 28-inch rope; braid the ropes together.
  11. Place the braid on a greased baking sheet.
  12. Form the braid into a circle and pinch the ends together to seal.
  13. Cover and let rise in a warm place until doubled in size, about 20 to 40 minutes.
  14. Brush the top with beaten egg white.
  15. Sprinkle with additional pepper.
  16. Bake at 375°F (190°C) for 25 to 30 minutes.
  17. Allow to cool on a wire rack.
