Parmesan Stuffed Shrimp

Ingredients

  • 1 c. Ritz cracker crumbs
  • 1/2 c. butter, melted
  • 1/4 c. Parmesan cheese
  • 1 1/2 Tbsp. dry wine
  • 1 tsp. lemon juice
  • 1/4 tsp. garlic powder
  • 24 jumbo shrimp (1 1/2 lb.)
  • paprika

Instructions

  1. Combine first 6 ingredients.
  2. Mix well and set aside.
  3. Peel shrimp, devein and butterfly.
  4. Place on cookie sheet.
  5. Fill each shrimp with cracker mixture.
  6. Bake at 250° for 25 minutes.
  7. Then broil 1 minute until lightly browned.
  8. Sprinkle with paprika. Serve with lemon wedges on "bed" of rice.
  9. Serves 4 to 6.
