Ingredients

  • 8 Tbsp. oil
  • 4 Tbsp. wine vinegar
  • 1 tsp. oregano
  • 1 tsp. coarsely ground black pepper
  • 1 tsp. salt
  • 6 green onions
  • 2 medium potatoes
  • 4 Tbsp. fresh parsley
  • 1 head lettuce, torn into pieces
  • croutons

Instructions

  1. Mix oil, vinegar and spices.
  2. Add onions, tomatoes and parsley.
  3. Marinate 1 hour or longer.
  4. Pour on lettuce and toss lightly.
  5. Top with croutons.
