Ingredients

  • 5 cups parsnip, peeled and thinly sliced
  • 1 cup leeks, sliced
  • 3 tablespoons olive oil
  • 1 1/2 cups extra good Parmesan cheese, grated
  • 1/2 cup onions, minced
  • 3 to 4 cloves garlic
  • 1 prepared vegetable shortening pie crust

Instructions

  1. Saute parsnips, leeks, onions, and garlic in olive oil over medium heat; do not allow this mixture to brown.
  2. You can mix a little butter with your olive oil if you like.
  3. Layer the mixture alternately with Parmesan cheese into the prepared pie crust.
  4. Sometimes, you can mix in some sautéed spinach as well.
  5. Season to taste.
  6. Bake at 350°F (175°C) for 45 minutes.
  7. Top with sliced tomatoes before serving.
