Passionfruit Delights

Ingredients

  • 3 None passionfruit
  • 8 tbsp (1 stick) butter, softened
  • 1/2 cup granulated sugar
  • 1 None egg
  • 1 cup flour, sifted
  • 1/2 cup self-rising flour, sifted
  • None None FOR THE FILLING
  • 5 tbsp butter, softened

Instructions

  1. Preheat the oven to 350°F. Grease and line 2 baking pans with parchment paper.
  2. Scoop out passionfruit pulp. Strain pulp for a few minutes to collect 1 tbsp of the juice for the filling. Reserve the passionfuit pulp
  3. Beat butter and granulated sugar in a large bowl with an electric mixer until light and fluffy. Add egg, beating well. Fold in combined flours and passionfruit pulp. Roll 2 level teaspoonfuls of mixture into balls. Place on prepared pans, flattening slightly with a fork.
  4. Bake for 10-12 mins, until pale-golden. Cool in pans 2 mins. Remove from pans; cool completely on wire rack.
  5. For the filling, beat butter and powdered sugar in a medium bowl with electric mixer until light and fluffy. Beat in reserved passionfruit juice. Sandwich cookies together using filling.
