Ingredients

  • 1 small eggplant
  • olive oil
  • 2 cloves garlic
  • 3 cups tomato sauce
  • your favorite pasta

Instructions

  1. Thinly slice the eggplant and fry in olive oil in small batches.
  2. Place fried eggplant slices on paper towels to dry.
  3. In the same oil, sauté garlic until fragrant.
  4. Add tomato sauce to the garlic and simmer for a few minutes.
  5. Add the fried eggplant to the sauce and cook briefly.
  6. Pour the sauce over cooked pasta, sprinkle with Parmesan cheese, and serve.
