Ingredients

  • 2 cups mostaccioli
  • 3 tablespoons butter
  • 3/4 cup chopped onion
  • 3/4 cup chopped celery
  • 1 to 2 cloves garlic, minced
  • 2 (6 oz.) cans tomato paste
  • 2 cups water
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon sugar
  • 2/3 cup grated Parmesan cheese
  • 1 pound Ricotta cheese

Instructions

  1. Cook mostaccioli according to package directions.
  2. Melt butter in a large skillet over medium heat.
  3. Add chopped onion, chopped celery, and minced garlic; cook until golden.
  4. Add tomato paste, water, basil, oregano, salt, pepper, and sugar; stir well.
  5. Cover and cook the sauce for about 20 minutes.
  6. Preheat oven to 400°F (200°C).
  7. In a 2-quart casserole dish, spread a thin layer of sauce on the bottom.
  8. Sprinkle with one-third of the grated Parmesan cheese.
  9. Layer half of the cooked mostaccioli, Ricotta cheese, sauce, and remaining Parmesan cheese.
  10. Repeat the layering with the remaining ingredients.
  11. Bake uncovered for about 25 minutes until hot, bubbly, and golden brown.
