Ingredients

  • 4 jumbo egg whites
  • 1 cup very fine sugar
  • 1/2 tablespoon cornstarch
  • 1 teaspoon lemon juice

Instructions

  1. Lightly dampen grease-proof paper or aluminum foil cut in a 9-inch circumference.
  2. Beat egg whites until stiff and frothy.
  3. Gradually add sugar and beat until thick.
  4. Fold in sifted cornstarch and lemon juice.
  5. Spread into a volcano shape on the prepared paper.
  6. Bake in a slow oven at 250°F for 2 hours.
  7. Turn off the oven and leave the pavlova in the oven until cool.
  8. Decorate with whipped cream, strawberries, kiwi fruit, and bananas.
