Ingredients

  • 2 eggs
  • 1 cup sugar
  • 2 cups sifted flour
  • 1 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 cup milk
  • 6 tablespoons melted shortening
  • 1/2 teaspoon lemon extract
  • 1/2 teaspoon vanilla extract

Instructions

  1. Beat eggs until fluffy.
  2. Add sugar, beating well.
  3. Sift flour, baking powder, and salt together.
  4. Combine milk, shortening, lemon, and vanilla extracts.
  5. Add the wet mixture to the egg mixture alternately with the sifted dry ingredients.
  6. Spread batter into a greased 9 x 12-inch pan.
  7. Arrange 4 cups sliced peaches on top of the batter.
  8. Mix 1 cup sugar with 1 teaspoon cinnamon and sprinkle over peaches.
  9. Bake at 375°F for 30 to 40 minutes.
