Ingredients

  • 12 medium ripe peaches (about 3 lb.), peeled and pitted
  • 2 3/4 cups sugar
  • 1 1/2 quarts heavy cream, chilled
  • 1/4 teaspoon salt
  • 1 teaspoon almond extract
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla

Instructions

  1. Wash and chill a 4-quart ice cream container and dash.
  2. Thoroughly chill the container.
  3. Force peaches through a food mill or food processor.
  4. Stir the sugar and lemon juice into the peaches and let sit for 20 minutes.
  5. Combine the heavy cream, salt, and extracts; mix with the peaches until well blended.
  6. Fill the freezer to the fill line with the ice cream mixture and follow freezing directions.
