A vibrant and refreshing salad combining sweet peaches, pineapple, crunchy pecans, and a tangy lemon gelatin base, perfect for picnics, potlucks, or summer gatherings.

Ingredients

  • 6 oz lemon jello
  • 1 package plain gelatin
  • 2 tablespoons water
  • 2 cups boiling water
  • 1 jar peach pickle
  • 1 (No. 2) can sliced pineapple
  • 2 apples

Instructions

  1. Pour 2 cups of boiling water over the lemon jello and stir until dissolved.
  2. Add the package of plain gelatin dissolved in 2 tablespoons water to the hot jello and stir well.
  3. Drain the peach and pineapple slices, then measure the juice and add enough water to make 4 cups.
  4. Add the juice mixture to the jello.
  5. Cut the peaches and pineapple into pieces and add them to the jello.
  6. Add the chopped pecans to the mixture.
  7. Peel and shred the apples using the large side of a grater.
  8. Add the shredded apples to the jello mixture.
  9. Congeal the salad in the refrigerator until set.
