Ingredients

  • 1 1/2 c. peanut butter
  • 1 (8 oz.) pkg. pitted dates, chopped
  • 3/4 c. confectioners sugar
  • 1/2 c. flaked coconut
  • 1 tsp. lemon juice
  • 1/2 tsp. grated lemon peel

Instructions

  1. In large bowl, stir all ingredients, except potato chips, until well mixed with hands.
  2. Shape mixture into 1-inch balls in crushed potato chips.
  3. Keep refrigerated.
  4. Makes about 36 pieces or 1 1/2 pounds.
