Ingredients

  • 2 to 2 1/2 lb chicken, cut to serve
  • 3 Tbsp shortening
  • 3 c celery
  • 1/2 c water
  • 1 tsp salt
  • 1 c minced onion
  • 1 1/2 cups peanuts

Instructions

  1. Brown the chicken pieces in a skillet or pot.
  2. Add the minced onion, celery, salt, water, and shortening to the pot.
  3. Cover and simmer for 45 minutes, adding hot water if necessary during cooking.
  4. Serve hot over rice.
