Peanut Sauce

Ingredients

  • 1 tsp. vegetable oil
  • 1 small onion, finely chopped
  • 1 to 2 cloves garlic, minced
  • dash of red (hot) peppers
  • 1/2 tsp. ground cumin
  • 1/2 tsp. ground coriander
  • 1 c. peanut butter (smooth or crunchy)
  • 1 Tbsp. soy sauce
  • 1 Tbsp. lemon juice

Instructions

  1. Heat oil in a saucepan; add onion and garlic.
  2. Fry for 2 minutes.
  3. Over medium heat, add remaining ingredients and mix well.
  4. If sauce is too thick, add extra lemon juice or plain water.
  5. If it is too thin, simmer gently until it becomes the right consistency to your taste.
  6. Makes 4 servings.
