Peanut Thai Chicken
Ingredients
- 2 pounds Boneless, Skinless Chicken Breasts ⓘ
- 3 Tablespoons Butter Or Oil
- 2 Tablespoons Garlic, Minced ⓘ
- 28 ounces, fluid Stewed Or Cooked Tomatoes ⓘ
- 1 can Coconut Milk
- 3/4 cups Peanut Butter ⓘ
- 3 teaspoons Cumin ⓘ
- 1- 1/2 teaspoon Cinnamon ⓘ
- 1 teaspoon Red/cayanne Pepper ⓘ
- 1/2 teaspoons Salt ⓘ
- 1 cup Fresh Cilantro, Chopped ⓘ
- Rice ⓘ
- Fresh Spinach Leaves ⓘ
Instructions
- Cut the chicken in to bite sized pieces.
- Cook in pan with bit of butter or oil and garlic.
- In pot mix all other ingredients except the chicken, cilantro, rice and spinach.
- Bring it to a boil and then mix in the chicken.
- Let simmer to mix flavors.
- Turn off heat and add chopped cilantro.
- To serve put down a bed of cooked rice then spinach leaves and sauce on top.
