Ingredients

  • 10 large ripe pears (5 lb.), quartered and cored
  • 1 cup water
  • 2 cups sugar
  • 1/2 teaspoon grated orange rind
  • 3 tablespoons orange juice

Instructions

  1. Combine pears and water in a large Dutch oven.
  2. Cover and cook over medium-low heat for 40 minutes or until pears are soft, stirring occasionally.
  3. Drain the pears.
  4. Press pears through a sieve or food mill to make a puree.
  5. Measure 1 quart of the pear puree.
  6. Combine the 1 quart of pear puree with remaining ingredients in a Dutch oven.
  7. Cook over medium heat, stirring frequently, for 15 minutes or until the mixture thickens.
  8. Remove from heat and skim off foam.
  9. Quickly pour hot pear mixture into hot sterilized jars, leaving 1/4-inch headspace.
  10. Wipe jar rims.
  11. Cover immediately with metal lids and screw on bands.
  12. Process in boiling water bath for 10 minutes.
