Ingredients

  • 1 lb. green beans, trimmed and broken into pieces
  • 4 firm ripe pears, peeled, cored and sliced
  • 1 sliver lemon peel
  • 1/2 cup water
  • 1 teaspoon salt
  • 6 slices bacon
  • 1/4 cup sugar
  • 2 tablespoons vinegar
  • 1 teaspoon fresh lemon juice

Instructions

  1. Place the pear slices in a saucepan with water and lemon peel; bring to a boil.
  2. Lower the heat and simmer, uncovered, for 5 minutes.
  3. Stir in the green beans and the salt; continue cooking until green beans are tender.
