Ingredients

  • 1 cup rice
  • 2 cups water
  • 1 small onion, minced
  • 1 green pepper, diced
  • 1/4 cup bacon, diced
  • 1 (8 oz.) can pigeon peas
  • 1/4 cup (2 oz.) tomato paste
  • salt

Instructions

  1. Fry bacon until crisp.
  2. Add green pepper and onion to the pan and cook until the onion is clear.
  3. Add water, peas, tomato paste, salt, black pepper, paprika, thyme, and rice.
  4. Cover the pot with a tight-fitting lid and simmer until all of the water has been absorbed.
