Ingredients

  • 1 medium zucchini
  • 2 Tbsp. oil or margarine
  • 1/2 c. pecans, broken
  • 1 tsp. soy sauce
  • salt and pepper to taste

Instructions

  1. Heat oil.
  2. Slice zucchini once lengthwise, then slice crosswise in 1/4-inch slices.
  3. Begin to saute zucchini.
  4. Add pecan pieces and soy sauce.
  5. Cook until softened.
  6. Recipe may be adjusted to your taste.
