Ingredients

  • 1 large onion, chopped
  • 1/2 cup margarine
  • 16 oz. can sliced stewed tomatoes with chili peppers or Ro-Tel tomatoes
  • 16 oz. can yellow corn

Instructions

  1. Saute chopped onion and margarine.
  2. Can be done in microwave; cover with plastic wrap.
  3. Drain and add sliced stewed tomatoes with chili peppers or Ro-Tel tomatoes and yellow corn.
  4. Add creamed corn as is.
  5. Refrigerate for 8 hours, if possible.
  6. When casserole is at room temperature, bake for 2 hours at 325°F.
  7. Cover with foil before baking.
