Ingredients

  • 4 c. milk
  • 3 eggs
  • 3/4 c. sugar
  • 2 1/2 c. half and half

Instructions

  1. Place milk in the top of a large double boiler.
  2. Bring water to a boil and cook until the milk is thoroughly heated.
  3. Remove from heat and set aside.
  4. In a separate bowl, whisk eggs and sugar together until well combined.
  5. Gradually add the heated milk to the egg mixture, stirring constantly.
  6. Return the mixture to the double boiler and cook over low heat until it thickens slightly, about 10 minutes.
  7. Stir in the half and half and peppermint extract.
  8. Chill the mixture in the refrigerator for at least 2 hours.
  9. Churn in an ice cream maker according to manufacturer’s instructions.
  10. Freeze until firm before serving.
