Ingredients

  • 1 3/4 cups plain flour
  • 1 cup sugar
  • 1/2 cup margarine or butter
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1 1/4 teaspoons vanilla
  • 1 cup confectioners' sugar
  • 1/4 pound peppermint candy

Instructions

  1. Two hours before serving or early in the day, prepare the dough.
  2. In a large bowl, measure flour, sugar, margarine or butter, baking powder, salt, egg, and 1 teaspoon vanilla.
  3. With a mixer at low speed, beat ingredients until well blended.
  4. Shape the dough into a ball.
  5. Preheat oven to 325°F (160°C).
  6. On a lightly floured surface, roll half of the dough into a 12 x 6-inch rectangle.
  7. Cut the rectangle lengthwise into 4 strips, then cut each strip crosswise into 6 pieces.
  8. Place the cookie rectangles about 1 inch apart on an ungreased cookie sheet.
  9. Bake for 12 to 14 minutes until lightly browned.
  10. Remove from oven and transfer to wire racks to cool.
  11. Repeat with the remaining dough.
