Peppermint Patty Bars

- Preheat oven to 425. Line a 9 x 13 inch pan with foil (bottom and sides)for easy removal. Melt 1 Tbl butter in pan. Melt butter and chocolate over double boiler. Stir occasionally until melted then remove from heat. Beat sugar, eggs, espresso, extracts, and salt with an electric mixer at high speed for 10 minutes. Add the chocolate mixture with mixer on low speed. Beat only until blended. Add flour and beat again on low only until mixed. Stir in coconut (or nuts). Spoon in half of batter into prepared pan; smooth top. Layer the peppermint patties over the chocolate layer but don't overlap them, they should only touch. Do not cut the mints to make them fit or the filling will ooze and burn. Spoon remaining batter over mints; smooth the top. Bake for 35 minutes. Let pan cool. Then invert pan and remove foil lining. Invert again so brownies are right side up. Refrigerate a few hours or overnight before cutting.
