Ingredients

  • 1 c. grated Cheddar cheese
  • 1/2 c. chopped fresh mushrooms
  • 2 green onions, finely chopped
  • 1/2 c. mayonnaise
  • 24 Melba toast rounds
  • 24 thin slices pepperoni

Instructions

  1. Combine grated Cheddar cheese, chopped fresh mushrooms, finely chopped green onions, and mayonnaise in a bowl.
  2. Spread about 2 teaspoons of the mixture onto each Melba toast round.
  3. Place a slice of pepperoni on top of each spread toast.
  4. Arrange the prepared toast rounds on a baking sheet.
  5. Broil in the oven for 3 to 5 minutes until the cheese melts and the pepperoni is slightly crisp.
  6. Serve immediately or keep warm in a 250°F (120°C) oven.
