Ingredients

  • 1 c. plain meal
  • 1/2 c. plain flour
  • 1 heaping tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. sugar
  • 1 egg
  • milk
  • cooking oil

Instructions

  1. Preheat oven to 450°.
  2. Grease bread pan or muffin pan lightly. Sift meal and flour, then mix all ingredients together, using enough milk for consistency.
  3. Add about 1 tablespoon cooking oil; mix well.
  4. Bake until golden brown.
  5. Yields 12 muffins or 1 hoecake.
