Ingredients

  • 4 whole eggs
  • 2 cups sugar
  • 1 cup shortening
  • 1/2 cup butter
  • 1/2 cup oil
  • 2 cups flour
  • 2 teaspoons soda
  • 2 teaspoons cinnamon

Instructions

  1. Beat eggs and add sugar; beat until light and fluffy.
  2. Add oil and melted butter, then continue beating.
  3. Sift together the flour, soda, cinnamon, and salt.
  4. Gradually stir dry ingredients into the egg mixture.
  5. Beat well until smooth.
  6. Add persimmon pulp and mix thoroughly.
  7. Pour half of the batter into a greased and floured 9-inch tube pan.
  8. Mix 1 cup ground nuts, 1 teaspoon cinnamon, and 4 tablespoons brown sugar.
  9. Sprinkle this mixture over the batter in the pan.
  10. Add the remaining batter on top.
  11. Bake at 300°F (150°C) for 60 minutes or in a 9x13-inch pan for 30 minutes.
