Ingredients

  • 16 oz. cream cheese, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 tablespoon lemon juice
  • 24 Nilla wafers
  • 1 cup chopped nuts (optional)
  • 1 can blueberry or cherry pie filling

Instructions

  1. Line 2 dozen paper baking cups with paper liners.
  2. In a mixing bowl, beat together the softened cream cheese and sugar until smooth.
  3. Add eggs one at a time, mixing well after each addition.
  4. Stir in vanilla and lemon juice until combined.
  5. Spoon the cream cheese mixture into the paper cups over the Nilla wafers.
  6. Bake at 350°F (175°C) for about 20 minutes or until set.
  7. Allow cheesecakes to cool completely.
  8. Top each cheesecake with a spoonful of blueberry or cherry pie filling.
  9. Optional: sprinkle with chopped nuts before serving.
