Ingredients

  • 4 c. sugar
  • 2 c. water
  • 1 lemon, sliced thin or 2 to 3 Tbsp. lemon juice
  • 1 Tbsp. cinnamon
  • 2 c. vinegar
  • 1 tsp. cloves
  • 1 tsp. allspice or 1 tsp. pickling spice

Instructions

  1. Mix sugar, water, lemon slices or lemon juice, cinnamon, vinegar, cloves, and allspice or pickling spice in a saucepan.
  2. Bring the mixture to a boil and cook for 10 minutes to create the syrup.
  3. Pour the hot syrup over prepared beets and process as desired for canning.
