Ingredients

  • 1 head cabbage
  • 1 bay leaf
  • 1 Tbsp. sugar
  • 1 Tbsp. salt
  • 2 c. water
  • 1 c. vinegar
  • 6 peppercorns
  • 1/2 tsp. allspice

Instructions

  1. Bake cabbage for 1 hour.
  2. Remove the charred outer leaves. Cut the cabbage into 1-inch wedges with the core attached.
  3. Simmer the water, vinegar and spices for 5 minutes.
  4. Pour over the cabbage in a jar and seal.
  5. Keep refrigerated.
