Ingredients

  • 3 oz. fresh ginger root, peeled and sliced thin
  • 1/2 c. red wine vinegar
  • 1/2 c. plus 2 Tbsp. sugar

Instructions

  1. Combine all ingredients together in a saucepan and bring to a boil.
  2. Boil for 1 or 2 minutes, depending on thickness of ginger slices.
  3. Cover and store in refrigerator.
  4. Keeps for several weeks.
